So, Got some much needed rest this morning, slept in to the ungodly hour of 9am. Today was butchering day. went out and
captured the rooster.
Crowing aside, notice the enlarged crown and wattles. He's developing sickle feathers (typical rooster tail) and his hackles are
pointed.
The crowing was the final straw to confirm. Some breeds have naturally large crowns and wattles, and since I bought it as "barn
yard mix" I didnt know the breed...
Following the steps in the video I posted (http://freedomandliberty.boards.net/thread/15/today-prepare?page=8) , water was put on to 150*, a couple drops of dish soap added. Bird was hung upside down in a
bucket as I cut the artery and pierced the brain pan.
Brought the bird inside and hung over the sink to clean him up... since the bird wasnt secured from food for 12 hours, it was a little
more messy with some other fluids mixed in with the blood.
Marking on the bird. Loved the coloring, but it is what it is...
dunking the bird in the water helps loosen the feathers for easier plucking.
Naked chicken legs.
NSFW - Naked bird. Looks almost like what you find in the supermarkets at this point.
head removed, butchering process starts. Small cut above the 'collar bone', seperate and loosen the crawl, bronchial tubes, etc.
small cut below the breast bone to access the insides. At this point it's just like cleaning a fish, pull the insides out while working
your fingers through the walls of the cavity to loosen the organs.
Thighs/legs removed, ready for cleaning.
Cleaned quartered, ready for cooking...
After last week, we learned that rooster meat is tougher than hen meet. So a stew was high on the list of 'what to do' however, I've
been invited to watch tonights MMA fight on PPV and need to bring a dish. Buffalo chicken dip to the rescue!!
Bone/skin/cook the chicken then shred it.
To messy to take pics while boning, but I assume everyone can remove the meat from the bones...
To much fight to bone these, so pan fried wings!
[
Mix in ingredients (Cream cheese, Franks red hot, Cheddar cheese) & Chicken
Bake
Ready to serve with dippers...
BONUS: Homemade Chicken broth
All the left over pieces (Some swear by adding the head and feet, but I dont. In a post-apocalyptic situation, I would,
every bit counts. Livers, etc)
Vegies - Onion, carrots, left over celery, garlic, salt, pepper, and special spices...
Simmering for a while, and by while, I mean hours...
After a few hours, pour the broth into a bowl, I use a collander to seperate everything. let the broth cool, then place in a freezer bag in the freezer until needed...
